CONFECTIONER-ARCHITECT - Maria Troitskaya
Maria Troitskaya, a confectioner with
an architectural background, has been making cakes for over 9 years.
Maria decided to drastically alter
her life nine years ago, in 2012. Since then, she has dedicated every day to
the art of confectionery, constantly honing her skills.
At the same time, she received an
architecture degree with honors from the Moscow Institute of Architecture. She
moved to France in 2016 after enrolling in the best architectural master's
program in Paris.
Architecture and pastry art are two
important aspects of her life. She was able to develop her own dessert style as
a result of her two different professions.
Each cake is a work of art in its own
right. Before putting her plan into action, she makes a lot of sketches,
creates drawings and models in special programs, and chooses the necessary
recipes and ingredients. Her sources of inspiration include art, architecture,
and travel.
Aside from the attention to detail in
the appearance, taste is the foundation and an important component of the
dessert. Harmony requires natural and fresh ingredients, a low sugar content,
and correct and varied textures.
She now works as a
confectioner-architect in Russia and abroad, teaching master classes all over
the world, designing dessert cards for restaurants and confectioneries, and
developing new techniques and recipes.
